INGREDIENTS 4 persons
500g of cardone
2 lemons
4 eggs
250g parmigiano
1 spoon of flour
200g of minced meat
salt
pepper to pleasure
milk ( 1/4 glasses)
hen broth ( vegetable broth)

PREPARATION
Put on a pair of gloves and start cleaning the cardone, selecting the tender parts. Cut them into little cubes and put them for some hours  in  water and ,lemon to lighten-up its typical bitter taste.

Then put the cubes of cardone in a mix of boiling water,salt, lemon juice  and a spoon of flour (that will avoid the vegetable to darken) letting them boil then drain them and dip them in cold water.

Proceed with the hen or vegetable broth. Then start preparing the meat balls. Amalgamate the meat with parmigiano, eggs, salt and a bit of milk ( to pleasure).

As soon as the broth boils prepare a mix of whipped eggs, salt and grated parmigiano ,put in the little meat balls, cubes of cardone well squeezed and the compound into the boiling broth, turning all quickly.

Serve hot  adding parmigiano ( or pecorino cheese to pleasure)
