INGREDIENTS 4 persons

  • 1kg lamb thigh
  • 4 eggs
  • 2 cloves of garlic
  • 1 twig of rosmary
  • 300ml white wine
  • lemons /21
  • grounded black pepper to pleasure
  • grounded pecorino cheese to pleasure
  • salt
  • extra virigin olive oil

PREPARATION
Bone the lamb's thigh, eliminate the fat and obtain little pieces of meat. Sauteed on each side the meat with rosmary, garlic and simmer with white wine until reduced.Cook the meat for a half an hour then take away the twig of rosmary. Whip the eggs adding the pecorino cheese, the juice of a half of a lemon, a bit of salt. Pour the mix on the meat and  blend until the egg cooks completely.
