INGREDIENTS 4 persons
- 2kg of fish (mussels, clams, cuttlefishes, squids, prawns, canocchie)
- 1 monkfish
- 1 sole
- Extra virigin olive oil
- 1 glass whitw wine
- 1 onion
- 1 garlic
- twigs parsley
- salt
- grounded pepper
- chilli pepper
- 1kg peeled tomatoes
PREPARATION
Sauteed the onion and garlic in extra virgin oil then add a sprinkle of pepper and chilli pepper. Add the tomato breaked into small pieces, salt and then simmer with a glass of white wine until reduce . Add some hot water before putting in cuttlefishes ans squids. Let them cook for 30minuits and add the fishes . After 15-20 minutes add the prawns, canocchie, clams and mussels. Let them cook for some minutes. Sprinkle with parsley.
